Spur pruned, shoot-thinned, hand leaf plucked, crop-thinned to one bunch per shoot, cropping at 2.5T/Ha, 3333 and 5000 vines per hectare.

The vineyard is Bio-gro certified organic and Demeter Certified Biodynamic in transition, Winery is certified organic.

Winemaking:
Hand harvest. 100% de-stemmed, 5 day cold soak, wild ferment, approximately 14 days post ferment maceration. 15 months in 40% new French oak, with wild malo, no fining, no filtration. The wine is vegetarian and has no fining agents used.
